Lumpfish roe and leeks are the two seasonal ingredients that I shot for the current issue of Copenhagen Food magazine. This beautiful dish featuring the roe was one of my favourites from the shoot – beautiful colours and perfectly plated by Marcus Sandemann – and of course it also tastes fantastic! Tears, tantrums, tulips….and a hamster

I recently shot promo images of ‘The God of Carnage’, the new stage production by That Theatre Company. On the shoot, I got a sneak preview of some of the scenes and lines, and I had already seen the Hollywood movie adaptation a couple of years ago. But nothing quite prepared me for last night, when I watched Ian Burns, Sira Stampe, Adam Brix and Katrin Weisser perform this explosive play in full. Over the course of one scene of 80 minutes in the perfect intimate setting of the Krudttønden stage, the four characters unravelled before our eyes in dramatic and hilarious fashion, switching allegiances, exposing their flaws….and making quite a mess.

I won’t spoil things by explaining what the hamster is about. Or the tulips. Just go and watch the drama unfold! It’s a modern classic, performed brilliantly. Darkly comic and brilliant fun. Don’t miss it!

Hugh of River Cottage comes to Copenhagen

I was booked to work on a really fantastic shoot yesterday, photographing Hugh Fearnley-Whittingstall (of ‘River Cottage’ fame) learning the art of authentic Danish pastry making from baker Thomas Mathiassen of Meyer’s Bageri here in Copenhagen.

Big thanks to Hugh and Thomas for all their co-operation and good humour on a warm morning (and after a very early start!), and to all the lovely people behind the scenes…

There’s nothing quite like the smell of pastries fresh from the Meyer’s oven on Danish summer morning… and ooooh they tasted sooooo good! 🙂

Its been a busy and fun month shooting for Copenhagen Food magazine, meeting and working with a host of great people – a profile shoot of chef Francis Cardenau (head chef at Le Sommelier, Copenhagen), ‘make at home’ sushi recipes using local fish by ZoeEscher, perfect picnic dishes with Mads Persson of Smag, plus strawberries and herbs in season with dishes created by Marcus Sandemann.

Cows in the mist

Cabrales, a hidden corner of northern Spain. Here, cheese is made by farmers who live in remote stone huts, high in the misty mountains. The cheese is matured from white to blue in damp, dark caves adorned with spiders webs. The pungent smell that greets you when you enter the caves is overwhelming. The only sound as you trek the path to reach them is of cow bells from the cattle, rendered invisible by the all-enveloping mist. Cattle which, when I did eventually come face to face with them, turned out to be the most beautiful (and enormous) cows I have ever seen.

Viking Sushi in Iceland

Ever wondered what it might be like to eat raw scallops trawled from the ocean floor just moments before, on the deck of a boat in the middle of the ocean, in the half-light of a winter’s morning in Iceland?! No neither had I, but I got the chance to try just that (an experience known locally as ‘Viking sushi’), courtesy of Isafold Travel in December last year.

It was an exhilerating experience I’ll never forget – fish will never get any fresher than that, the scenery was spectacular and it came complete with soy sauce and a real live viking… Read about it and see the photos in the March/April issue of Copenhagen Food magazine, out now.

2nd place in the Malta Tourism Press Awards 2012

Nice news! I have been awarded 2nd place in the MTA Malta Tourism Press Awards 2012, for photographs I shot for a Food and Travel magazine article titled ‘A Knight’s Tale’, published last year.
